Banana Pancakes


1 banana
1 egg
2 tablespoons coconut flour
or 1 scoop Vanilla protein powder


Mash banana until smooth, mix in egg then flour or protein powder until smooth. Lightly spray pan with oil. Pour batter into pan and cook until golden and cooked through. Repeat with remaining batter. Can add some banana slices on top or sprinkle with cinnamon.

French Toast







Coconut oil


Sugar free Maple syrup


Mix 1 egg, light milk (probably around 1-2 tbsp), vanilla and cinnamon in a bowl. Cover two pieces of toast in the mix.

Heat coconut oil in a pan and cook both sides of toast until browned. Add strawberries and sugar free maple syrup

Chia Pudding

I like this for the warmer months or for a healthy dessert. Keeps you going for the day.


1 Cup Coconut milk (any milk you like)

2 tablespoons chia seeds

1/4 Cup frozen or fresh berries

Flesh of fresh coconut or dried coconut thread

1/2 to 1 teaspoon Vanilla paste or extract


Best made the night before. Simmer berries on the stove & add coconut chips as berries cook. Once cooked (looking a bit like jam) turn off the heat and set aside.

Put coconut milk and chia seeds in a bowl to soak overnight. In the morning scoop some of the berries into a bowl or jar and top with the chia mixture.  For serving you can sprinkle a pinch of cinnamon or spoonful of berries.
